🌟🍽️ The Duke Café culinary students had an incredible opportunity to showcase their talent at the first-ever AgriCulinary Tech Chef Challenge: Innovation Meets Culinary Excellence, hosted by Virginia State University on October 24th, 2024! 🌾 Their three-course creation celebrated local flavors and sustainable practices, featuring: 🥗 Autumn Endive Salad with apples, couscous, and dried cranberries, finished with a brown butter dressing. 🦐 Pan-Seared Prawns served with bacon crème succotash and topped with fennel slaw. 🍐 Pomegranate Poached Pear paired with local honey whipped ricotta foam and spiced pistachios. This unique competition merged the creativity of ProStart® standards with innovative tech and local sourcing, giving our talented students—N. Rice, K. Brown, N. Evans, and D.
