The Duke Café culinary students participated in the first-ever AgriCulinary Tech Chef Challenge: Innovation Meets Culinary Excellence, hosted at Virginia State University on October 24th, 2024. This unique competition is designed to merge creativity with the high standards of the ProStart® competition while encouraging the use of locally sourced ingredients and sustainable cooking practices. The menu included:
Autumn Endive salad with apples, cous cous, and dried cranberries finished in a Brown butter dressing.
Pan Seared Prawns paired with Bacon creme Succotash finished with/ Fennel Slaw.
Pomegranate Poached pear paired with local honey-whipped Ricotta foam finished with spiced pistachios.
